Instructions
Step 1
Preheat oven to 425°. Rinse poblanos and slice down the length of the pepper. Arrange on lined baking sheet. Bake poblanos for about 15min.
Step 2
Mix shredded chicken, beans, corn, cottage cheese, seasoning in a bowl.
Step 3
Remove peppers from oven. De-seed the peppers once they have cooled sufficiently. Stuff with chicken mixture. Top with cheese and enchilada sauce, and broil in oven.
