Instructions

Here's how to make the sauce:

Heat the sherry or wine in a large skillet.

Add the zucchini and garlic and cook for 5 minutes, stirring occasionally.

Add the tomatoes, parsley, basil, and capers and cook 2-3 minutes more, until heated through.

Season generously with pepper.

Here's how to make the pasta:

Bring large pot of salted water to a boil.

Trim the ends from the zucchini, and cut lengthwise into halves.

Place the zucchini halves cut side down on a cutting board, and then slice them lengthwise into thin strips.

Add the zucchini to boiling water and cook for 3 minutes. Do not overcook.

Drain.

Combine with sauce, add cheese.
