A great summer dinner, when the zucchini crop is plentiful! Works very well served with corn-on-the-cob. Recipe originally from Heidi Ebersole.

Step 1
Preheat oven to 350°

Brown hamburger in skillet. Drain fat. Transfer meat to a medium-sized mixing bowl.
Step 3
Slice zucchinis in half the long way. Use the knife to mark a half-inch thick border around the edges. Use a spoon to scoop out the flesh. Chop the scooped-out zucchini flesh; add to the mixing bowl.
Step 4
Stir in the bread crumbs, minced garlic, parmesan cheese, and any other Italian spices. Mix well to coat the meat and zucchini.
Step 5
Add the marinara sauce, and mix well.
Step 6
Lay the zucchini halves in a baking dish. Generously stuff each zucchini boat with the meat mixture. Cover tightly with foil.
Step 7
Put any extra stuffing in a 1-quart baking dish. Cover with foil, and bake alongside the zucchini boats. (Extra stuffing is popular!)
Step 8
Bake in preheated oven for 45 minutes.
Step 9
Remove from the oven; remove the foil. Sprinkle with shredded cheese. Return to the oven for approximately 5 minutes, until the cheese is melted and the stuffing is hot & bubbling.
