Chickpea and Spinach Curry (Vegan)

Also known as Chana Palak, this tasty and filling vegan curry is quick and easy to put together. The recipe uses HighSatiety Madras sauce however this can be replaced with a purchased masala curry sauce to make the preparation easier. This dish is very low in energy density and high in fibre and still remains low in energy density when served with a portion of rice (preferably brown) or half a naan.

Step 1
Heat the Madras sauce in a large saucepan and add the drained chickpeas, coconut milk, water and a sprinkle of salt. Cook for 15 minutes then add the spinach. Stir this in well, cover and cook for a further 20 minutes, stirring regularly. Add additional water if required and taste to check whether further seasoning is necessary. Serve.
