Instructions
Step 1
Cut the potatoes into thin sheets using some type of vegetable sheet cutter.
Mandoline
Step 2
Slice each 12” (or longer) length into 2 triangles. (see video)
Knife
Step 3
Roll up each triangle as you would a croissant, starting at the thick end and ending with the third point.
Step 4
To curve each croissant appropriately, you’ll need a muffin pan. Lightly grease the pan itself, then place each rolled up croissant into its own well. Brush olive oil on top to perfect crispiness.
Step 5
Bake at 350°F until golden brown. Enjoy!
