This is a super easy recipe for a crunchy vegan granola that goes well on so many things like cooked apples, yogurt, in milk or just to snack on! It is quite versatile as well as you can use whatever you have on hand! You can eliminate any nut or seed listed or add your own favorites!

Step 1
Preheat oven to 325 degrees F
Step 2
In a small pot in the stove, melt the coconut oil into the maple syrup
Step 3
Combine all dry ingredients into a large bowl, except the dried fruit
Step 4
Pour the melted syrup mixture over the dried and mix very well so all the dry is coated with the wet. This is important in order to get the crunch!
Step 5
Bake for 18-20 minutes on a silicone or parchment paper lined sheet, turning pan half way for even baking.
Step 6
Cool completely and then add any dried fruit if using
Step 7
Break it up and store air tight at room temperature for up to 2 weeks
