Instructions
Step 1
Rinse chicken, remove excess fat, and pat dry.
Step 2
Shred unpeeled zucchini in food processor or grate on large holes of a hand grater.
Step 3
In a 11/2-quart saucepan, melt margarine and add zucchini.
Step 4
Cook, stirring, about 3 minutes.
Step 5
Remove from heat.
Step 6
Grate or shred bread into crumbs and add to zucchini.
Step 7
Stir in egg and seasonings, mixing well.
Step 8
Preheat oven to 400°.
Step 9
Carefully loosen skin on each chicken quarter to form a pocket and spoon one fourth of the stuffing into each.
Step 10
Brush each quarter with honey and bake for 50 minutes until tender.
