Instructions

Step 1
Prepare this the night before you want to serve this pork
Step 2
Cut 3 deep slits on both sides of the pork
Step 3
Salt it very heavily all over, including inside the cuts. No need to measure, just sprinkle heavily

Mix the sour orange with the garlic and seasonings. If you don’t have access to sour orange, use the juice of two oranges and one lime.

Pour half on one side of the pork, rub it into the cuts
Step 6
Flip it over and pour the rest of the marinade over

Marinate overnight

The next day, about 8 hours before you want to serve it, place the pork in an oven safe dish with a lid, such as a Dutch oven, at 250 degrees Fahrenheit
Step 9
Let it slow cook for 6 hours, then take it out of the oven. If the bone comes out easily, it’s ready to serve. If not, let cook for another 45 minutes or until the bone comes out easily
Step 10
Serve with white rice, black beans, and yucca con mojo
