Instructions
Making the Sausage Meat
Step 1
Mix 100g bread crumbs with 60 ml water and set aside. Break up and separate 1kg of pork mince, (not fat free) and place in a large mixing bowl. Add in the sea salt, black & white pepper, sage, nutmeg, Cayenne pepper and bread crumbs and thoroughly mix together.
1st Layer of Bacon

Grease a loaf tin and then place rashers of streaky bacon around the dish so as to cover the bottom and over-hang the sides
1st Layer of Sausage Meat
Step 3
Fill the tin to a third of its depth with sausage meat making sure you press it well in
The Hard Boiled Eggs
Step 4
Arrange the eggs along the centre of the tin and pack in place with some more sausage meat
Remaining Sausage Meat
Step 5
Now pack the remainder of the sausage meat around and over the eggs.
The Bacon
Step 6
Fold the hanging bacon back over the sausage meat to completely enclose it (don't worry if you need to cut and patch bits)
Cooking
Step 7
Bake in the centre of the oven at gas mark 6 for 1 hour, (ovens vary keep an eye on it) If your air fryer is big enough you could use that, adjust times accordingly.
