This one hopefully will satisfy everyone at the table. It’s hard to go wrong with familiar flavours of this mexican food favourite. Feel free to add beef, chicken or pork to the rice and bean mixture. Precooked meat can be added at any point, raw meat should be cooked before adding other items to the skillet.

Instructions

Step 1
Wrap tortillas in foil and heat in a 350F oven while you prepare the filling and toppings.
Step 2
In a large skillet heat oil over medium heat. Heat corn, beans and rice. Add cooked protein if using.
Step 3
Add salt, cumin, paprika and garlic powder. And ¼ cup of water.
Step 4
Heat through until filling is warm and the water cooks off.
Step 5
Mash avocado and mix with mayonnaise until smooth to create a creamy sauce.
Step 6
Assemble burritos, filling tortillas with corn mixture and topping with cheese, tomatoes and avocado sauce. Add a little hot sauce if you like a kick. Wrap snugly and eat as is or grill them in a hot dry skillet until golden on each side.
