Step 1
Cook chicken thighs to soften and allow the meat to be removed easily
Step 2
Coat diced chicken thighs in self-raising flour and shallow fry in batches until golden and cooked most of the way through. Set aside on a plate.
Step 3
In the same frying pan (after draining excess oil) combine all the ingredients for the sauce and bring to a simmer. You may need to balance the sauce depending on the strength of your ingredients.
Step 4
Add chicken to the mix so it cooks through and the sauce thickens.
Step 5
Serve with rice and fresh vegetables
