Slow Cooker Pulled Pork and BBQ Rice Platter

Instructions

The Pork

Step 1
Mix the salt sugar and spices and cover over the pork shoulder
Step 2
Roughly cut the onion and separate the garlic cloves and add to the bottom of the slow cooker with the cidre and cidre vinegar
Step 3
Place the grill plate on top and rest the pork on.
Step 4
Tip over any excess spices and slow cook on low for 8 hours
Step 5
Remove the pork and a mug of the juices from the bottom to make the BBQ sauce with extra brown sugar, vinegar, and equal parts cornflour and water slurry
Step 6
Wrap the pork in foil and set aside or in a warming oven at no more than 120C

The Rice

Step 7
Wash the rice and tip into the slow cooker and add the can of black beans and coconut milk with some extra salt and MSG
Step 8
Mix it around and slow cook on high for 1 hour
Step 9
Tip out the rice into a large bowl with kitchen roll or a tea towel over the top followed by a lid and set aside

The Wedges

Step 10
Slice the potatoes into wedges no thicker than 1/2 inch, toss in oil and salt and air fry at 200C for 30 mins, flipping around twice during cooking
Step 11
Tip out into a bowl and toss in a Cajun slice mix

The Slaw

Step 12
Finely slice the veggies into a large bowl and add mayo, mustard, lemon juice and salt and pepper. Adjust the flavour with more lemon and salt to your liking.
Step 13
Wack into a burrito or enjoy as is!
