Instructions

Step 1
Oven 350. Make a foil sling for an 8-inch baking pan.
Step 2
Whisk flour, sugar, and salt in a bowl. Add melted butter and stir to combine. Transfer mixture to the pan and press into an even layer. (Do not wash bowl.) Bake until dark golden brown, 19-24 min.
Step 3
Filling: Whisk flour, sugar, cream of tartar, and salt in the previous bowl. Whisk in eggs and yolks until no streaks remain. Whisk in lemon zest and juice. Transfer to a saucepan over med-low heat. Stir constantly until thickened and 160. Off heat, stir in butter. Strain through a fine-mesh over a bowl.
Step 4
Pour lemon mixture over the hot crust and bake until barely jiggling, 8-12 min. Cool completely before removing from pan.
