2 lbscrawfish tails
cooked

Tortillas
corn or flour, you preference

Pepper Jack cheese sticks

16 ozHeavy whipping cream

16 ozchicken stock

2onions
Crawfish boil, finely diced

6mushrooms
Crawfish boil

1 tblspLouisiana hot sauce

2 tspOld Bay

3green onions
finely diced

2 tblspgarlic paste

1 lbshredded pepper jack cheese

1 lbshredded mozzarella

cajun seasoning
to taste

kosher salt

black pepper

3 tblspbutter

parsley
finely chopped
crawfish boil potatoes

Instructions
Step 1
Melt butter in skillet and add green onions and sauté until tender
Step 2
Add whipping cream, chicken stock, garlic, seasonings, mushrooms, hot sauce and simmer until desired thickness
Step 3
Add a little sauce to 9x13 baking dish to coat bottom
Step 4
Add crawfish and mushrooms to sauce
Step 5
To each tortilla, add a pepper jack stick and a few crawfish boil onion pieces and roll up
Step 6
Once all enchiladas have been laid in pan, pour sauce over the top
Step 7
Top with pepper jack cheese and mozzarella
Step 8
Add to 350 degree oven until cheese is bubbly
Step 9
Garnish with parsley
Step 10
Let cool for a few minutes then enjoy
