Creating the starter:

In a glass jar, put 1 cup of water, ½ cup of white sugar, 3 TBSP potato flakes, and 1 packet of active dry yeast (make sure to check the expiration date). Stir with a wooden spoon and put the lid of the jar on loosely. Place starter on your countertop for 5 days, then transfer to the fridge until you’re ready to make a batch of bread. Note: you should feed the starter every other week (or more often if you like!)

Feeding the starter:

Every two weeks or every time you want to make bread (whichever comes first), get starter out of the fridge, and feed it with the following ingredients. Once fed, let sit on the counter for 1-2 days to allow the yeast to get active for making the bread.

• 1 cup warm water

• ½ cup white sugar

• 3 TBSP potato flakes

White bread recipe:

In a large glass or plastic bowl (not metal), mix first 5 ingredients below. Stir and then add in flour. Mix will with a large wooden spoon or spatula. Cover lightly with greased wax or parchment paper and place in a warm area for 6-8 hours (or overnight).

• 6 cups of bread flour

Dough will double in size, punch the dough down and split into two loaves. Knead each loaf and place in your glass bread loaf dishes. Cover lightly and let rise an additional 4-5 hours. Bake at 350 degrees for 30-35 minutes (until fully cooked). Spread butter on the tops as they come out of the oven and enjoy!
