Nigerian Style Fried Rice

This is my version of my mum's Nigerian fried rice using a different technique and my mum's secret ingredient to her fried rice.

Ingredients

Chicken Marinade
4 pieceschicken thighs
1 Tbspcurry powder
1 tspturmeric
2cloves garlic
minced
1 Tbsplight soy sauce
1 tspblack pepper
1 tspsea salt
For Fried Rice
Instructions
Step 1
In a medium bowl, add in the ingredients and mix together. Allow to marinade for 30 mins or overnight(even better).
Step 2
In a dutch oven or heavy duty pot on medium high heat, add in some vegetable oil and the chicken pieces and sear them until light brown on each side for 3 mins. Do this in batches. Remove chicken pieces and set aside.
Step 3
Add in butter and a bit vegetable oil into the pot. Add in the onions and cook for 1 min or until onions have softened. Add in the garlic, ginger and carrot and cook for 2 mins or until fragrant. Add in turmeric, curry powder and chill powder and stir together until well incorporated.
Step 4
Add in the basmati rice and mix tighten with the other ingredients. Add in the soy sauce, chicken bullion cubes and stir together until well incorporated. Add the chicken pieces back into the pot. Reduce the heat to medium low heat and cook the rice for 30 to 40 mins until the rice and chicken is fully cooked.
Step 5
Remove the chicken pieces and check the rice for seasoning and adjust seasoning if necessary. Add in the spring onions and a knob of butter, mix together. Add back the chicken pieces. Remove from the heat and enjoy !
