Marinade

8boneless skinless chicken thighs
sliced

2red onions
sliced

4garlic cloves
minced

4 teaspoonssoy sauce

1 ½ tablespoonslemon juice

1 ½ tablespoonsvegetable oil

2 tablespoonschili powder

2 tablespoonspaprika

2 teaspoonscurry powder

1 ½ teaspoonscayenne

1 ½ teaspoonsginger powder

1 teaspoonsalt

1 teaspoondark brown sugar
Rice
Instructions
Step 1
This recipe calls for a rice cooker, if you don't have one I assume you know how to cook rice a different way (but also, please get a rice cooker it'll make life so much easier).
Prep

Slice your chicken and onions.


Marinade
Step 3
Into a mixing bowl, combine garlic, soy sauce, lemon juice, vegetable oil, chili powder, paprika, curry powder, cayenne, ginger powder, salt and sugar.











Step 4
Add in your chicken and onions, and mix till everything's fully coated.


Step 5
Leave to marinade overnight (or until you get a lil too hungry).
Rice
Step 6
Rinse your rice, then add to your rice cooker, along with soy sauce, garlic powder, paprika, ginger powder, and curry powder. Mix till all your grains are coated.






Step 7
If using vegetable stock, add to your rice cooker instead of water (1:1 ratio), otherwise use water as normal and start the rice cooker.

Cooking Time

To an oiled up pan or skillet on medium-high heat, add your chicken and onions and cook till chicken is fully cooked and onions are browned.
Serving
Step 9
Place your rice as your base, followed by your chicken & onions on top, and enjoy!
