Instructions

Step 1
Prepare pie crust according to instructions (either homemade or store bought) and prebake.
Step 2
Fry the 5 slices of 1/2 inch pieces of bacon. Once most of the fat has rendered and slightly crisp, remove to a plate with paper towel to absorb the grease.
Step 3
In a separate frying pan with a large bottom, adding 1 Tablespoon olive oil and diced onions. Add 1/2 teaspoon salt to get the onion to release juices. Continue to fry until golden. Add 1/4 cup of water to release the bits from the bottom of the pan and darken the onion to light brown color.
Step 4
In a mixing bowl, whisk eggs with 1/2 teaspoon salt, 1/4 teaspoon pepper, 1/4 teaspoon grated nutmeg and 1/2 teaspoon mustard.
Step 5
Once whisked together, whisk in the 1 1/2 cups heavy cream
Step 6
In the bottom of the prebaked pie shell, evenly distribute the bacon, caramelized onion and diced cheese. Pour the egg and cream mixture overtop. Place foil around the crust to protect from burning. Bake in a 350 degree oven for 40 minutes or until the center is set.
Step 7
Remove from oven and let set for 10 minutes. Slice and enjoy.
