marinade

5gFresh Coriander Stalks

25gPalm Sugar

1 Tbsplemongrass purée

5 Tbspfish sauce

2garlic cloves

3Finger Chillis

1 tspRice
Toasted

5 Tbspcornflour

10gfresh coriander

2 Tbspfish sauce

1 Tbspoyster sauce

1 TbspRice
Toasted

1lime juice
juice of lime

lime zest

50gPalm Sugar
or Honey

Instructions
Step 1
Separate the wings into drums and flats and add them to a large bowl.
Step 2
Add all of the marinade ingredients to a blender (or pestle and mortar) and blend to a paste. Add the paste to the wings and mix, ensuring that the paste covers all the wings.
Step 3
Sprinkle the cornflour over the wings and mix to form a batter, leave to marinate while you prepare the dressing.
Step 4
Finely Chopped the coriander and add to a bowl, add in the remaining dressing ingredients and mix.
Step 5
Add the oil to a large skillet or frying pan and heat the oil to 160 degrees add in the wing’s taking care not to overcrowd the pan, and cook until golden brown. Remove the wings from the pan and drain on a wire rack.
Step 6
Once drained add the wings into the bowl with the dressing and coat all the wings.
Step 7
Time to plate up.
Step 8
Serve the wings on their own, lick you’re lips and enjoy.
