Ingredients
4 servings
1 recipepizza dough
herbed, or 1 store bought dough
1 Tbspolive oil
divided
1red potato
large, thinly sliced into rounds
½ cupcashew cream
arugula
salt
to taste
pepper
to taste
Pesto Ingredients
1 bunchfresh basil leaves
finely chopped
⅛ cupfresh parsley leaves
finely chopped
1 Tbspwalnuts
chopped
1clove garlic
minced
red pepper flakes
1lemon
Juice from, small
¼ cupolive oil
salt
to taste
Potato Seasoning Ingredients
Instructions
Step 1
Preheat oven to 450°F
Step 2
Place a heat safe skillet in the oven while it is heating up
Step 3
Follow the herbed pizza crust recipe to prepare the crust if using
Step 4
Chop the finely chop the basil, parsley, walnuts, and garlic for the pesto and place in a small mixing bowl
Step 5
Add the remaining pesto ingredients to the mixing bowl and salt and pepper to taste; cover and set aside
Step 6
Prepare the spice mixture by combining all of the ingredients in a small mixing bowl; cover and set aside
Step 7
Use a mandoline or a knife to thinly slice the potato
Step 8
Remove skillet from the oven and brush with ½ Tbsp of olive oil
Step 9
Carefully place the dough into the hot skillet and gently spread to the edges
Step 10
Spread the remaining olive oil over the top of the dough
Step 11
Spread the pesto over the dough
Step 12
Top the pesto with the the potato slices
Step 13
Brush potato slices with the spice mixture
Step 14
Bake for 15 - 20 minutes until crust is golden and potatoes are crispy

Remove from the oven and top with cashew cream, arugula and a drizzle of olive oil

Salt and pepper to taste
