French Onion soup was my go-to appetizer at restaurants up until I transitioned to vegan a few years ago. I was shocked when I found out it wasn’t even vegetarian as I never cooked it before. The other night it was cold and snowy and I was really craving it, so I looked up how to make french onion soup and figured I could twist it to make it vegan. The main ingredients to switch out are the beef broth for vegetable broth, a vegan Worcestershire sauce , and top it with vegan cheese.

Instructions

Step 1
1) Caramelize the onions -Melt vegan butter in a pot and keep heat low -chop onions into thin slices and add to melted butter -add thyme -add a hefty pinch of salt and sugar to pot to aid the caramelization process -let sit in pot for about an hour, stir every so often -you’ll know they’re done when they reach a dark caramel brown color S2) Deglaze the pot with red wine -get the brown bits off the pot with a rubber spoon/scrapper 3) Season - black pepper -garlic -vegan Worcestershire sauce -balsamic vinegar -thyme -parsley -nutritional yeast -salt to taste -the SMALLEST pinch of cinnamon 4) bring to boil and let simmer for 20 minutes 5) add croutons to bottom of oven safe bowl 6) Add soup to bowl 7) Cover in cheese 8) Add parsley, thyme, black pepper on top 9) what we love about cheese is the salt and fat, don’t let vegan cheese get in the way of that. I always add coconut oil, or vegan butter ON TOP of vegan cheese i my putting in the oven so that it doesn’t end up crunchy. We want GOOEY! 10) broil until cheese melts and enjoy
