Instructions
Toast the spices
Step 1
In a small frying pan, toast cinnamon sticks, cloves, and cardamom pods for 2 to 4 minutes or until fragrant and set aside.
Cook the rice
Step 2
In a medium-size pot, add drained and rinsed rice, then 400 ml water or until it covers the rice. Cook for 10 minutes while occasionally stirring on medium flame until the water evaporates but not entirely.
Step 3
Add 470 ml of water and let it simmer for 15 minutes while covering it with a lid.
Step 4
Add coconut milk, cinnamon stick, cloves, cardamom pods to the pot, bring it up to a gentle simmer on low, medium flame, and remove the lid for 15 minutes.
Step 5
Add pistachios, maple syrup, vanilla essence, rose water, lemon zest, and cook for additional 15 minutes until the consistency has thickened.
To serve
Step 6
Serve it with ground cinnamon and freshly cut pistachios, and enjoy!
