This is a zingy, zesty, summery side dish that can be assembled in minutes and requires no cooking. It makes a great accompaniment for grilled fish, baked ham, griddled chicken or halloumi. The recipe can be easily doubled to feed a crowd. It also works with borlotti, haricot or cannellini beans.

Reserve a few coriander leaves as a garnish.
