Orange Matzo Meal Pancakes

Pancakes for Passover, Yum! No need to get the expensive mix, make them from scratch. These are very good. I first made these pancakes for Passover 1992. ~Marilyn Sultar

Instructions

Step 1
Beat the egg yolks very well.
Step 2
Add salt and COLD orange juice.
Step 3
Add grated orange rind. Beat thoroughly.
Step 4
Stir in matzo meal. Let mixture stand for 1/2 hour .
Step 5
Beat egg whites until stiff.
Step 6
Fold matzo meal mixture into beaten egg whites.
Step 7
Heat oil for frying.
Step 8
Drop batter by tablespoons into VERY HOT oil.
Step 9
When you see bubbles forming on the pancakes, turn them over to cook on other side so both sides are a golden brown.
Step 10
Serve warm with cinnamon or jelly or kosher for Passover pancake syrup.
Step 11
Makes 10 small pancakes.
