Step 1
Wash and chop red peppers, romaine, red onion, cucumber, black beans. Combine washed ingredients, plus chicken and pumpkin seeds into a large bowl.
Step 2
Prepare the dressing by blending the avocado, garlic, lime juice, cilantro, yogurt, olive oil, and water in a blender until smooth.
Step 3
Pour the dressing over the salad, mix, and serve with tortilla chips. If meal prepping, store the salad and dressing separately and dress the salad when ready to eat.
