Grandpa Pintos Slop

I was first introduced to this meal on Thanksgiving in 1999. It was the first holiday I spent with my now husband's family. When I saw what was called "slop" I wanted to turn tail and run! I agreed to taste it since it was the polite thing to do and now 23 years later I make this recipe any day of the week for my three sons. They can't get enough "slop" and I am continuing the family tradition using my mother in laws "slop pot" (Dutch oven) and cooking her father's recipe. My grand father in law immigrated here from Italy via Ellis Island in search of the American dream. (I think he found it) He fed his family of 6 with what is now dubbed Grandpa Pinto's Slop! Enjoy this dish from my family to yours!

Instructions

Step 1
Crisp bacon in Dutch oven and remove from pan.

Add diced onions to pan and cook until opaque.

Add diced tomato and continue to cook until reduced.

Add rice and water according to package directions adding chicken boullion garlic and bay leaves to taste.

Add 4 cans of soup and 2 cans of corned beef that you have broken up in the can.

Add bacon back to Dutch oven and cook on low heat.
