Instructions
Step 1
Preheat oven to 250 degrees
Step 2
Spray baking sheet with cooking spray (or line it with non-stick aluminum foil)
Step 3
Combine maple syrup and oil in saucepan, bring to a boil, stir to dissolve. (Be careful, as this will burn easily if unattended).
Step 4
Remove from heat, stir in vanilla .
Step 5
Combine oats, pecans and cinnamon in large bowl.
Step 6
Pour maple mixture over and stir to combine.
Step 7
Spread mixture on baking sheet. Bake for 35-40 minutes at 250 degrees
Step 8
Continue to bake 10 minutes longer or until desired crunch. Then add raisins and stir. (note: I added raisins and baked and they came out hard so I amended the recipe to add raisins at the end!)
Step 9
After cooled, place granola in airtight container.
