Instructions

Step 1
Cook tagliatelle in salted water until al dente.
Step 2
Snap the woody bottoms off the asparagus stalks and throw them away.
Step 3
Cut asparagus on the diagonal into 2cm length.
Step 4
Peel garlic cloves by crushing them lightly with the flat of a knife and the heel of your hand.
Step 5
Slice the chilli pepper (remove seeds if you don’t like it too spicy)
Step 6
In a large frying pan heat the oil and add the asparagus and a few pinches of salt and sauté for 2 minutes, until the asparagus softened.
Step 7
Add garlic and chilli pepper and sauté for another 3 minutes, then add tuna, double cream and tagliatelle with pasta water, and mix well.
Step 8
Squeeze half of the lemon on top and sprinkle with lemon zest and most of the parmesan cheese.
Step 9
Serve with the last of the Parmesan sprinkled on top.
