Turkey Burgers with Cheddar and Pickled Onions

Instructions

Step 1
To make the pickled onions: Separate the onion rings and place in a bowl. Cover with 2 cups (480 ml) boiling water and let stand for 5 minutes. Drain and add the vinegar, mustard seeds, salt, peppercorns, red pepper flakes, and 1/2 cup (120 ml) cold water. Refrigerate for at least 1 hour, up to 1 week.
Step 2
To make the burgers: Place the turkey in a large bowl and mix with the mustard, salt, and pepper. Shape the mixture into 4 patties, each about 3/4 inch (19 mm) thick.
Step 3
Heat the oil in a large nonstick frying pan over medium heat. Add the burgers and cook for 5 minutes. Turn the burgers over with a wide spatula and top evenly with the cheese. Cover the pan lightly with a piece of foil and cook until the burgers are no longer pink in the center and the cheese is melted, 6 to 7 minutes.
Step 4
Toast the buns, if desired, and place the burgers on the buns. Top with the pickled onions and serve.
