Slowcooker Lamb & Potato Curry ππ₯ 372 cals a serving
No peeling or boiling potatoes here it cooks in the sauce, you donβt even have to boil the kettle for the stock! This absolutely stunning curry really packs flavour with the addition of fresh mint it is flavour overload. You can swap the lamb for chicken thigh or beef for a really rich, flavoursome curry. Very filling too so will stretch far portion wise.
Ingredients
- 300g of lamb OR chicken or beef
- 6 potatoes finely chopped skin on π₯
- 4 x garlic cloves π§
- 1 x can of chopped tomatoes π
- 1 tbsp tomato purΓ©e π
- 1 x can of reduced fat coconut milk π₯₯
- 1 tsp cumin π₯
- 1 tsp Garam masala π₯
- 1 tbsp curry powder π₯
- 1 tsp ginger and turmeric π₯
- 1 tbsp mango chutney π₯
- 2 x bay leaves π
- 1 lamb or chicken stock pot
- 1 x onion π§
- Fresh mint to garnish π
- Salt
- 1 tbsp of cornflour if you want a really thick sauce
Add everything to the Slowcooker and cook on high for 4 hours or low for 8. DONE
372 cals a serving. I bulk out further with rice π Top with some fresh mint for extra flavaaaa π₯
