One dish rice that can be adapted for whatever you have in. I've added ham, chorizo, prawns, peppers, beans, sweetcorn.... with the last 3, I changed the seasoning to be more Mexican. You could also do a curry style version.

Step 1
Heat the oven to 180 C, Mark 4 (160 fan)
OvenPreheat
Step 2
Fry the onion & celery until translucent. Include other hard veg here if your using them
Step 3
Add the rice, garlic, bayleaf, salt and pepper and stir well so the rice is coated. Add things like ham or chorizo here or soft veg like sweetcorn (not prawns though - put them in near the end of cooking)
Step 4
Transfer to a shallow ovenproof dish and add tomatoes, tomato puree, stock & water.
Step 5
Stir well and cook for about an hour. Remove bayleaf before serving
