Instructions

Step 1
1. Boil pot of salted water.
Step 2
2. Trim and thinly slice mushrooms and scallions. Separate white from green scallions. Mince garlic.

3. Cook pasta until al dente. Reserve 1/2 cup cooking water.
Step 4
4. Heat oil in pan over medium heat. Add mushrooms, scallion whites, and garlic. Season with salt and pepper, cook until softened 2-4 mins.
Step 5
5. Stir in sour cream, cream cheese, stock concentrate, 1/4 cup pasta water, and butter. Simmer 2-3 mins until slightly thickened, take off heat, season to taste.
Step 6
6. Toss cooked penne with sauce. Top with Parmesan and scallion greens.
