Ingredients
8 servings
DRY MIXTURE

2 cupsall-purpose flour
plus extra to dust pan

1 ½ tspbaking powder

½ tspbaking soda

½ tspsalt

½ cupnuts
optional
WET MIXTURE
Instructions
Step 1
Preheat oven to 350 degrees.

Step 2
Grease and flour pan.
Step 3
Mix together dry ingredients in a large bowl. (Rather than sift I just use a whisk to mix them together.)
Step 4
If you want to add nuts do so to dry ingredients.
Step 5
Create a well in the center of the dry ingredients and set aside.
Step 6
Mix the wet ingredients together.
Step 7
Add the wet mixture to the dry mixture.
Step 8
Gently fold all the ingredients together to form a wet batter. Don't over-mix as that will make the bread really heavy and dense.
Step 9
Pour into greased and floured pan.
Step 10
Bake in a preheated oven for 1 hour, until golden and well risen. The bread is ready when the edges shrink from the sides of the pan.
Step 11
Keep bread in pan about 10 minutes.
Step 12
Carefully run knife around the edges and turn out. Cool on a wire rack.
ADDITIONS:
Step 13
3/4 cup of chocolate chips. Add with wet ingredients.
