Step 1

Set oven to 450 and line a baking dish with tinfoil add all chopped vegetables on pan. Then d

Slightly chop off the very tip of 2 cloves of garlic heads place in tinfoil. Drizzle the tops in olive oil and fold the foil completely around the head of garlic. Then place on the covered baking sheet.

Step 3

Drizzle olive oil, sprinkle salt pepper and basil all over vegetables. Place baking dish in oven till soft approximately 40 minutes. ( pro tip: broiler to slightly charre vegetables)




Step 4

Set aside garlic head and blend all remaining cooked vegetables in blender till really smooth.

Step 5

Take roasted garlic out of foil and squeeze out garlic cloves onto a lightly oiled 5qrt pot. Then add tomato paste. Let them cook together for a few minutes then add blended vegetables.




Step 6

Add 2 cups or chicken broth and 2 cups heaving whipping cream. Salt and pepper to taste and reheat soup but do not boil. Once portioned drizzle chili oil on top for an extra kick
