Preheat oven to 425°F
Step 1
Line rimmed baking sheet with parchment paper. Place the onions on the prepared baking sheet, tossing with 1T olive oil, salt. & pepper; spread in even layer & roast (5 min.) Remove pan from oven; push onions to one side.
Step 2
Toss bell peppers in med. bowl with 1T olive oil, salt, & pepper; place in center of baking sheet. Place sausages in the empty area next to them, spacing evenly apart.
Step 3
Roast (25 min.) until onions are translucent & tender; peppers should be soft & charred in spots. Sausage must be completely cooked through. (For even cooking, turn vegetables halfway through cooking.)
Step 4
Cut sausages into bite-size pieces; divide evenly between hoagie rolls; top with peppers & onions.
