Instructions
Making the Dough
Step 1
Beat the butter and brown sugar until pale and fluffy, then mix in honey and beat again

In a separate bowl, sift together the flour, spices, pinch of salt and baking powder.

Step 3
Slowly add the dry mixture into the wet, mix thoroughly before adding the milk a little at a time until the dough is soft.

Using your hands, fix the dough into a ball and wrap in plastic before placing dough in the fridge to chill for at least an hour. Longer is better.

After the dough has chilled, remove from fridge and preheat the oven to 180°C – 350°F

Line 2 baking sheets with parchment.

Spread some flour onto a flat, clean surface and flatten the dough with a rolling pin. It may help to put some flour onto the pin as well to keep it from sticking.

Use cookie cutters to cut flat dough into any desired shape. Remove all possible shapes from the first flattening and ball up the recycled dough and repeat. Once all shapes have been cut out, set aside.
Step 9
Prep a shallow bowl of granulated sugar. Take some water and brush over one cut shape, making both sides sticky before placing into the bowl of sugar and thoroughly coating both sides. Repeat this process for every cookie.

Place the sugared cookie shapes onto each baking sheet. Make sure to leave about 1/2 inch between each shape. Place one baking sheet at a time into the oven for around 13-15 minutes until at desired texture. Less for chewy, more for more for crispy.

Once the first batch is finished, repeat until all shapes have been baked. Wait until cool to remove them from the sheet and place them into a tin. Enjoy!
