Slow Cooker Pot Roast is a mouth-watering, healthy meal that will feed the entire family. This easy pot roast recipe features veggies, potatoes, and lots of tender meat for a rounded out meal.

Instructions

Step 1
Rub salt and pepper into all sides of roast. Coat the roast with the flour mixture on all sides.
Step 2
Add olive oil to a hot pan and sear the roast on all sides, approximately 4 to 5 minutes per side. (Use two spoons to flip turn roast.)
Step 3
Peel the potatoes, cut them into 1-1/2" pieces, and add to the slow cooker.
Step 4
Dice the onion and celery and add it to the slow cooker, as well as the carrots and garlic.
Step 5
Add the chuck roast on top and sprinkle the onion dip over the top of the roast.
Step 6
Add a pinch of salt and pepper.
Step 7
Add the can of chicken broth and 2-1/2 cans of water to the slow cooker. (You might need a little bit more or less water, depending on the size of your slow cooker).
Step 8
Set on low and cook for 8 hours or until the roast is tender.
Step 9
Serve with onions and mushrooms sauted in butter.

Gravy

Step 10
In a separate skillet, melt 4 Tbsp. butter and add 4 Tbsp. flour. Cook to make a medium brown roux. Add liquid from crockpot and 1 can of beef broth and dry Lipton onion soup mix. Cook until thickened.
Step 11
Another option: mix 1 1/2 Tbsp cornstarch into 1 cup beef broth until dissolved. Turn crockpot onto high and whisk the cornstarch broth into the juices. Allow to thicken, stirring occasionally.

Leftovers

Step 12
Southern Pot Roast French Dips-shred the leftover pot roast and heat it in a pan. Arrange Swiss cheese over the top to melt, then portion onto slice rolls with caramelized onions. Serve with au jus dipping sauce.

Beef pot roast baked tacos- arrange crunchy taco shells in a casserole dish so they’re standing up. Fill with shredded leftover pot roast and top with shredded cheese. Bake for 8-10 minutes at 375 Fahrenheit until the cheese is melted and shells are crispy. Remove and add your choice of toppings like tomatoes, lettuce, sour cream or guacamole.

Southern Pot Roast Crustless Pot Pie- combine 1 cup of chopped celery in a large skillet with 1 Tbsp of butter. When tender, sprinkle with 1/4 cup of flour and stir until golden brown. Stir in 2 cups of beef broth until the flour is dissolved. Next stir in 1/2 cup of heavy cream and bring to a simmer. Add in leftover potatoes, carrots, and beef roast and simmer until thickened, about 5 minutes. Toast 1 cup of Pablo crumbs in a separate skillet with 2 Tbsp of melted butter and 1/2 tsp garlic powder, then spread over the thickened beef filling and serve.
