Vegetarian Sweet Potato Tacos with Lime Crema

Good one! I added smoked paprika and oregano to the beans / sweet potatoes, also I added salt early on to the sweet potatoes so as they steamed on the pan, the salt infused in them, requiring less salt at other stages and increasing the depth of flavor. Plus, if you like spice, I served them with El Yucateco XXX hot sauce, it adds a nice smokiness.

I added WAY to much garlic. Maybe I'd make again but I don't see me making it any time soon

melted feta on the tortilla - was good.

Added some jalapenos for some spice. Still felt like it was needing something else to tie it together but overall it was yummy

This was fantastic! I subbed pinto beans for the black beans and left out the green onions (per the roommate's request). The next time I make it, I may play around a bit more, adding some other veggies. My roommate recently went vegetarian for health reasons, and I do most of the cooking, so finding new recipes like this that we can make a staple is super helpful!

Great stuff! The sweet potatoes take a little longer to cook so I tried to cut them up smaller. The crema is delicious! I had left overs because I did street tacos instead of standard. Will definitely make again.

Instead of black beans I did one pepper and made some pico to go on top and it was so good!
