1.1 lbdried pasta shapes
I use fusilli for this recipe
1 lbcherry tomatoes
sliced in half - I like to use rainbow tomatoes, but you can use regular
10.5 ozmini mozzarella balls
sliced in half
4baby cucumbers
or 1 regular cucumber, sliced
1red onion
large, peeled and sliced
1 bunchfresh parsley
large, chopped
½ cupolive oil
3 Tbspwhite wine vinegar
0.5lemon
zest and juice of
1 clovegarlic
peeled and minced
1 tspsugar
½ tspdried oregano
1 tspsalt
¼ tspblack pepper
2 Tbspfresh parsley
finely chopped
Instructions
Step 1
Cook the pasta according to package instructions. Drain and run under cold water to cool and prevent sticking.
Step 2
While the pasta is cooking, prepare the Italian dressing by mixing all the dressing ingredients until smooth.
Step 3
Transfer the cooked pasta to a large salad bowl. Add tomatoes, mozzarella, cucumber, red onion and parsley.
Step 4
Drizzle with half the dressing and toss to combine.
Step 5
Serve pasta salad with remaining dressing.
