1 bunchscallions

trimmed, halved lengthwise, and cut into 1-inch lengths

large, cut into coins and smashed

Absolutely delicious, definitely make again. Fried butter beans in butter and olive oil, added garlic once they’d blistered a bit. Took off heat and added spring onion, feta and dill. Added to a bed of rocket, drizzled extra virgin olive oil and a handful of mixed seeds. Absolutely lovely and all ready in about 6 mins!
