Ingredients
4 servings
2 tablespoonsolive oil
pink himalayan salt
to taste
freshly ground pepper
to taste
2garlic cloves
thinly sliced
½ teaspooncrushed red pepper flakes
2 x 15 ouncescannellini beans
cans, or beans of choice, rinsed
1 bunchkale
ribs removed, leaves torn into bite-size pieces
½ cupvegetable
low-sodium
1 tablespoonfresh lemon juice
Instructions
Step 1
Heat a skillet to medium-high and heat remaining with the olive oil.
Step 2
Add garlic and red pepper flakes and cook, stirring, until fragrant, about 30 seconds.
Step 3
Add the beans and cook, stirring occasionally, until beginning to expand, about 3 minutes.
Step 4
Using a spoon, lightly mash about half of the beans. Add kale and broth and cook, tossing often, until kale is wilted, about 2 minutes.
Step 5
Add lemon juice and season with salt and pepper.
Step 6
Makes 4 servings
