Hot Italian Sausage Tomato Cream Sauce with Rigatoni

2Shallot
minced
6cloves garlic
minced
2 tspextra virgin olive oil
1 lbHot Italian Sausage
if using links, remove casing
½ cupwhite wine
dry
4 Tbsptomato paste
29 ozTomato Sauce
canned tomato sauce
1 tspitalian seasoning
1 tspdried basil
½ tspsalt
½ tspblack pepper
½ cupHalf and half
can use heavy cream for a richer sauce, use more or less cream to taste
5 ozbaby spinach
1 lbrigatoni
Parmesan
Grated
Fresh Basil
Fresh Parsley
Optional, to serve
Instructions
Step 1
Heat olive oil in a large sauté pan or Dutch oven over medium heat. Add minced shallots and garlic and cook for 2 minutes until fragrant.
Step 2
Add Italian sausage to pan and break into small pieces with a wooden spoon. Sauté for several minutes until sausage is almost cooked.
Step 3
Pour in white wine and simmer for a few minutes. Next, mix in tomato paste and stir frequently and cook about 5 minutes until the tomato paste starts to darken and caramelize.
Step 4
Pour in tomato sauce then add in Italian seasoning, basil, salt, and black pepper. Stir to combine and let simmer for about 10 minutes.
Step 5
Lower heat and ad cream, stirring until combined. Add in baby spinach and mix into sauce until wilted.
Step 6
Meanwhile, cook rigatoni and add directly to the sauce once al dente. Combine with the sauce. Stir in some starchy pasta water as needed to loosen up the sauce.
Step 7
Plate the pasta and serve with grated parmesan and fresh herbs as desired.
