fresh, bruised or crushed with your hands

or brown sugar, more to taste

1 ½ tablespoonssoy sauce
tamari for GF

1Chinese eggplant
or Japanese

1red bell pepper
medium, or large, sliced

1 cupThai basil leaves
kept whole, large leaves torn, plus more for garnish

lime juice
Freshly squeezed, if not using lime leaves

mild, sliced thinly for garnish, optional, for color
