Used 4 medium potatoes and doubled the stock. I used half beef stock, half vegetable stock. I would cook the vegetables a bit longer next time, maybe 8-10 minutes instead of 6. It was delicious! Oh I did put in a bit of corn starch to thicken at the end. Meat was sooooo tender!!

It was very good. Next time I will add another cup of broth and substitute the sweet potato for another potato
