I felt that the gnocchi with the beans would make a very carb heavy dish so I made some pretty heavy substitutions but I think it worked really well. I used Trader Joe's frozen sweet potato gnocchi with sage, used two 14oz bags. I doubled the rest of the ingredients or close to doubled. Substituted baby bella mushrooms for the beans. First cooked the mushrooms in a heated pan, no oil or water until mushrooms had cooked down a bit and were fragrant. Removed the mushrooms from the pan and set aside. Used chopped Swiss chard instead of spinach and cooked that with the gnocchi. Added in mushrooms at the end with the gnocchi and Swiss chard. It came out very delicious! Will definitely make aagin!
