This spicy tomato sweetcorn soup is my go-to vegan lunch recipe. It's vegan, low-fat gluten-free and quick and easy to make - this recipe comes together in just 30 minutes. Fresh tangy tomatoes and sweetcorn are always a winning combination. Add some rice and red lentils for a bit more texture and don't forget about spices: oregano, cumin and smoked paprika. This tomato sweetcorn soup is delicious and flavourful and it's bursting with fresh and healthy ingredients. It's hearty and filling as well as light, low fat and healthy. Serve topped with freshly squeezed lemon juice, fresh parsley, red chilli flakes and a slice of your favourite rustic bread.
