Ingredients: 1 pint grape tomatoes, (chopped); 3 medium peaches, (diced); 1 tablespoon olive oil; 2 to 3 tablespoons finely chopped fresh basil; Kosher salt and freshly ground black pepper, (to taste); 1 French baguette, (cut into 1/2-inch thick slices); Olive oil, (for brushing bread); 2 cloves garlic, (peeled); Whipped Cottage Cheese, (optional but so good); Honey or hot honey, (for drizzling (or use balsamic glaze))
