Step 1
Begin by preparing the pesto. Combine olive oil, fresh basil, fresh parsley, garlic clove, lemon juice, toasted pinenuts, and salt & pepper in a blender. Blend until you achieve a smooth consistency.

Next, prepare the 'tuna' mousse. In a food processor, combine cooked chickpeas, silken tofu, nori sheet, capers, lemon juice, dill, dijon mustard, Nooch, and salt. Blend until smooth.
Step 3
Now, assemble the sandwich. Spread a generous amount of 'tuna' mousse on a slice of bread. Add sliced avocado, tomato, and optional broccoli sprouts. Spread pesto on another slice of bread and place it on top.
Step 4
