Ingredients
4 servings
1 lbPersian Cucumbers
or English
½ tspsalt
2cloves garlic
minced
2 tspBlack Vinegar
can also use rice wine vinegar
2 tspSoy Sauce
low sodium
½ tspgranulated sugar
1 tspsesame oil
½ tspChili Oil
more or less based on spice preference
¼ tspRed Pepper Flakes
optional, more or less based on spice preference
1 tspsesame seeds

Instructions
Step 1
Cut the cucumber in half length-wise. Smash each section with the flat side of a chef's knife. Cut each piece at a diagonal into bite-size pieces.
Step 2
Add the cucumber pieces to a large bowl. Sprinkle with the salt and stir to combine. Let the the cucumbers sit for at least 10 minutes to draw out water. After sitting, drain the excess water.
Step 3
Add all of the dressing ingredients to the cucumbers and mix well. Serve right away.
