Instructions
Step 1
Preheat the oven to 350 degrees F (180 C). Dice the bread into cubes and combine with ½ tbsp olive oil. Spread the cubes on a baking sheet.

Combine the butter beans with ½ tbsp olive oil. Spread them on a separate baking sheet.
Step 3
Place both baking sheets in the oven and cook for 20 minutes, until the bread is toasted and the beans are crispy.
Step 4
In a large bowl, combine the arugula, cucumber, tomatoes, red onions, toasted bread cubes, crispy beans, basil, almonds, and artichokes.
Step 5
In a small bowl, mix the olive oil, balsamic vinegar, mustard, and minced garlic to create the dressing.
Step 6
Drizzle the dressing over the salad, toss to combine, and enjoy your Tuscan Salad.
